Ethyl Maltol

Ethyl maltol is a food additive with a sweet odor that can be described as caramelized sugar or cooked fruit. It’s a cost-effective flavor enhancer because only a tiny usage, usually 0.01-0.1%, could significantly boost the original odor of food. Besides, it could also help to cover the unpleasant odor of some highly concentrated meat products or seasonings.

FAQ

A: When using ethyl maltol products, it is not suitable to contact ironware and stainless steel products, or the food will turn red. Foodstuff containing ethyl maltol needs to avoid contacting metal as much as possible.

A: Based on the classic ethyl maltol products, AIPU FOOD has developed a purified ethyl maltol product T01 with pure flavor and no foreign odor, making it easy for clients to apply to various fields.

A: As a food flavor enhancer, ethyl maltol has an apparent effect at a low dosage. The normal dosage varies from 0.1‰ to 0.5‰, and a few ppm is effective sometimes. In practice, prepare ethyl maltol into 0.25% solution by hot water, or solute ethyl maltol in ethyl alcohol or glycerol, and then determine the optimal additive amount through trial test using the solutions above. Avoid direct addition, or ethyl maltol is not thoroughly dissolved or efficiently to make an effect.
