AIPU FOOD’s caramel color, hydrolyzed vegetable protein, soy sauce powder, disodium succinate and ethyl maltol can be applied to meat products as required.

 

* Caramel color for meat products
Caramel color can improve the appearance of meat products. This water soluble and thermostable colorant overcomes the pinkness or grayness of meat, provides the product with uniform color and shows visual appeal to the customer. 
According to China’s national food safety standard, GB 2760 Standard for Use of Food Additives, direct addition of caramel color to meat is not permitted unless the colorant is plain caramel (E150a) and the meat is processed but uncooked. Meanwhile, the US labeling regulation prohibits caramel color’s use in raw meat products other than surface application because of concerns about the proper handling and cooking of the products. 
However, we may still use caramel color (E150a, E150c, E150d) to enhance the coloring in various meat applications including soy sauce, batter, meat rubs, spice blends and meat dips. Please check Seasonings for more information. 

 

* Hydrolyzed vegetable protein for meat products
AIPU FOOD offers a variety of HVP products depending on customized needs for flavors, from light neutral umami to strong beef smoke. For meat products, HVP can either simply improve the salty and umami taste, or add a strong roasted meaty note to enrich the original meat flavor. The food ingredient HVP can be used directly in meat products and meat seasonings, while typical applications include beef jerky, sausages and roast meat. 

 

* Soy sauce powder for meat products
AIPU FOOD’s soy sauce powder provides meat products with a popular Asian flavor, which is a blend of salty, umami and fatty flavor. SSP is applied to the processing and cooking process of meats in both food processing and food service applications, reduces the amount of added salt and meets the health and flavor requirements of customers. Typical applications include sausages, beef jerky and ham. 

 

* Disodium succinate for meat products
AIPU FOOD’s disodium succinate is a theomostable flavor enhancer and can help enhance the umami taste of meat products. According to China’s national food safety standard, GB 2760 Standard for Use of Food Additives, direct addition of disodium succinate is permitted only to seasonings. Thus we may use disodium succinate for meat via spice blends, meat rubs, and other seasonings. Please check Seasonings for more information.

 

* Ethyl maltol for meat products
The effective flavor synergist, ethyl maltol, can enhance the overall flavor of meat products. Ethyl maltol is classified as a synthetic food flavor in China’s national food safety standard, GB 2760 Standard for Use of Food Additives, and can be used in processed meat products including cured meat, cooked meat and casings.

Product Appearance: Caramel color liquid (E150a).
Color Range: Golden - Dark brown.
Specification: Color intensity (Typical) 0.050 Absorbance of a 0.1% (w/v) solution of caramel in deionized water measured in a 1-cm cell at 610 nm wavelength.
Product Feature: Plain caramel, low sulfite.
Application: Widely used in sauces, semisolid compound seasonings, syrup, milk drink, brandy, whisky, rum, cookies, condiments, cocoa/chocolate and instant coffee because of its brilliant coloring properties.
